Ingredients
1 head kale (any variety), rib removed, torn into bite-size pieces
1 cup avocado, chopped
2½ Tbsp. extra virgin olive oil
1½ Tbsp. lemon or lime juice
1 tsp. Celtic sea salt
½ tsp. cayenne
1 cup grape or cherry tomatoes, halved or quartered
1 Tbsp. hemp seeds
Directions
Mix the first six ingredients in a bowl by squeezing the kale and avocado with your fingers to “wilt” the kale and cream the avocado. Then add the tomatoes and mix more gently. Adjust seasonings to taste and then top with hemp seeds. Serve immediately.
Tip: Feel free to experiment and add different ingredients you have on hand. I sometimes add a little purple cabbage or purple onion for beautiful color. You can also add chia seeds (omega 3s) and/or kelp flakes (minerals) for added nutrient content. Have fun and enjoy!
